These cookies are a twist on the classic peanut butter cookie, with the addition of salted peanuts for a bit of crunch and extra flavor.


  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup salted peanuts, chopped


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, cream together the butter, peanut butter, and sugars until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Stir in the chopped salted peanuts.
  8. Drop the dough by rounded tablespoons onto the prepared baking sheet.
  9. Bake for 10-12 minutes, or until the cookies are golden brown.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


Tip: For extra crunchy cookies, chill the dough for at least 30 minutes before baking.
