Chocolate Covered Peanuts

Ingredients:

  • 1 cup salted peanuts
  • 1 cup chocolate chips (semi-sweet, milk chocolate, or dark chocolate)
  • 1 tablespoon coconut oil (optional)

Instructions:

  1. Line a baking sheet with parchment paper.
  2. Melt the chocolate chips and coconut oil (if using) in a double boiler or in the microwave.
  3. Stir in the peanuts until they are well coated in chocolate.
  4. Drop the chocolate covered peanuts by spoonfuls onto the prepared baking sheet.
  5. Refrigerate for at least 30 minutes, or until the chocolate has hardened.
  6. Enjoy!

Tips:

  • For a variation, you can add other ingredients to the chocolate covered peanuts, such as chopped nuts, dried fruit, or candy pieces.
  • To make peanut clusters, drop the chocolate covered peanuts by spoonfuls onto the prepared baking sheet and then let them cool and harden completely. Once the chocolate has hardened, you can break the clusters into smaller pieces.
  • Store the chocolate covered peanuts in an airtight container at room temperature for up to 1 week.
