This stir-fry is a quick and easy way to make a delicious and healthy meal. The salted peanuts add a nice crunch and flavor to the dish.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup salted peanuts, chopped
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil

  1. In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned on all sides.
  4. Add the onion, garlic, and bell peppers to the skillet and cook until softened, about 5 minutes.
  5. Add the peanuts, soy sauce, chicken broth, rice vinegar, sugar, and sesame oil to the skillet. Stir to combine.
  6. Bring to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 2 minutes.
  7. Serve immediately over rice or noodles.

  • For a spicier dish, add a pinch of red pepper flakes to the skillet when you add the onion, garlic, and bell peppers.
  • If you don’t have salted peanuts, you can use unsalted peanuts and add a pinch of salt to the skillet when you add them.
  • Serve the stir-fry with your favorite garnishes, such as chopped green onions, cilantro, or sesame seeds.
