Hancock Peanut Chicken Stir-Fry
This stir-fry is a quick and easy way to make a delicious and healthy meal. The salted peanuts add a nice crunch and flavor to the dish.
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup salted peanuts, chopped
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
Instructions:
- In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook until browned on all sides.
- Add the onion, garlic, and bell peppers to the skillet and cook until softened, about 5 minutes.
- Add the peanuts, soy sauce, chicken broth, rice vinegar, sugar, and sesame oil to the skillet. Stir to combine.
- Bring to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 2 minutes.
- Serve immediately over rice or noodles.

Tips:
- For a spicier dish, add a pinch of red pepper flakes to the skillet when you add the onion, garlic, and bell peppers.
- If you don’t have salted peanuts, you can use unsalted peanuts and add a pinch of salt to the skillet when you add them.
- Serve the stir-fry with your favorite garnishes, such as chopped green onions, cilantro, or sesame seeds.
