These cookies are a twist on the classic peanut butter cookie, with the addition of salted peanuts for a bit of crunch and extra flavor.
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup salted peanuts, chopped
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, peanut butter, and sugars until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the chopped salted peanuts.
- Drop the dough by rounded tablespoons onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the cookies are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
