8 to 12 servings.

Ingredients:

  • 2 pounds catfish fillets, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 2 large carrots
  • 3 garlic cloves, finely chopped
  • 4 bay leaves
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 2 (15 ounce) cans tomato sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 hard-boiled eggs, chopped coarse
  • 2 tablespoons chopped green onion

Instructions:

  1. Heat a large pot over medium heat.
  2. Add the catfish fillets and cook until browned on both sides.
  3. Remove the catfish from the pot and set aside.
